Sear, Pour, Simmer: How to Make Your Creamy Decadent Chicken Marsala
Heat your favorite pan, and make sure your wine glasses are ready for dinner because this dish comes together in minutes.
- Heat a large skillet over medium heat.
- Lightly season your chicken with salt and pepper.
- Add olive oil and butter to your heated pan. The butter will provide a hint of richness while the olive oil has a higher smoking point and will keep the butter from burning.
- Cook your chicken 2-3 minutes per side until golden brown. It will finish cooking in the sauce. Set aside.
- Add your shallots and mushrooms. Allow them to sauté until the shallots are tender and the mushrooms beginning to brown.
- Deglaze the pan with the marsala wine, making sure to scrape up all of the brown bits from the bottom of the pan.
- Add heavy cream and Dijon mustard and stir to combine.
- Add the chicken back to the pan, along with any drippings. Let the sauce simmer until it thickens.
- Garnish with parsley.

Creamy Decadent Chicken Marsala

- 1 large skillet
Ingredients
- 2 large chicken breast, sliced into cutlets
- 2 tbsp olive oil
- 2 tbsp butter
- 1 tbsp salt
- 1/2 tsp black pepper
- 1 shallots, finely diced
- 1 8 oz mushrooms, sliced
- 1/2 cup Marsala wine
- 1 cup heavy cream
- 1 tbsp Dijon mustard
- 1 tbsp parsley, chopped
Instructions
- Heat a large skillet over medium heat.
- Lightly season the chicken.
- Add the oil and butter to the skillet, allowing the butter to melt.
- Add the chicken to the pan. Cook the first side 2-3 minutes before flipping. Cook the second side 2-3 minutes. You want it lightly golden.
- Remove the chicken from the pan and add the shallots and mushrooms. Allow them to sauté until the shallots are tender and fragrant and the mushrooms are beginning to brown.
- Add the Marsala to the pan, making sure to scrape up any brown bits on the bottom of the pan.
- Add the heavy cream and Dijon. Stir to combine.
- Add the chicken back to the pan along with any drippings. Allow the sauce to simmer and thicken.
- Garnish with parsley.
