    What is your favorite dessert to say I love you with? I can't think of a more perfect sweet treat to serve up than this Flourless Red Wine Chocolate Cake. Decadent and rich, it's the perfect way to celebrate.

    When it comes to romance, nothing says "I love you" like sumptuous chocolate. This cake takes it over the top with a combination of traditional and unexpected flavors.

    This Flourless Red Wine Chocolate Cake is perfect for any special occasion. It's dramatic yet effortless. When it comes to spending time with those you love you don't want to spend all day in the kitchen.

    I fully admit I am not a big fan of cakes in general. There has to be something special about it to really make my taste buds dance. This easy and elegant cake with its crown of whipped cream and red wine roasted strawberries is my absolute favorite.

    Flourless Red Wine Chocolate Cake

    This dense and silky cake requires only a handful of ingredients, but they all play an important role. With the omission of flour, eggs become the base for this moist and fudgy masterpiece.

    Dark chocolate is melted until silky smooth, giving that complex slightly bitter note that pairs perfectly with all things sweet. Red wine acts as both the liquid in this cake, and also a flavor unto itself. A pinch of cayenne brings dramatic flair while adding just a kiss of savory heat.

    Sinking your fork into this delicious confection is like slicing into a piece of your favorite fudge. Sturdy but incredibly moist and light, its crumbs hug the fork. A cloud of fluffy whipped cream glistening with jewels of red wine roasted strawberries is the cherry on top of this beautiful cake.

    Whipping Up Flourless Red Wine Chocolate Cake

    Flourless cakes lend themselves to easy baking. Unlike many cakes that require careful mixing as to not create a tough crumb, this cake simply requires a little melting of chocolate and butter and whipping of eggs.

    • Use a good quality dark chocolate. Since this is the predominate flavor, pick your favorite. The same hold true for the red wine. Pick something you love to drink.
    • Melt the chocolate and butter together. You want to melt it on low so it melts gently.
    • Use a hand mixer to beat your eggs and sugar together. You want it to be light and frothy.
    • Pour the melted chocolate and butter mixture into the frothy eggs and sugar. Keep mixing as you add the remaining ingredients.
    • Preheat your oven to 350 degrees and grease a 9" round cake pan.
    • Add your Flourless Red Wine Chocolate Cake batter into the pan. Bake for 30-40 minutes.
    • Allow the cake to cool completely before serving.
    • When making your whipped cream, it helps if your bowl and heavy cream are cold.
    • Whip together your heavy cream and powdered sugar until soft peaks have formed. You want it creamy, dreamy, and luscious.
    • For the red wine roasted strawberries, slice your berries in half. Toss them with your red wine and sugar and spread them on a baking sheet. Roast at 400 degrees until they are soft and the juices thick and bubbly, stirring once halfway through.

    Ingredients
     
     

    Flourless Red Wine Chocolate Cake

    • 6 eggs
    • 1 cup granulated sugar
    • 12 oz dark chocolate
    • 1 stick butter
    • pinch of salt
    • 1 tsp vanilla
    • ½ cup red wine

    Red Wine Roasted Strawberries

    • 2 cups strawberries, halved
    • 3 tbsp red wine
    • 3 tbsp sugar
    • 3-4 sprigs fresh thyme

    Whipped Cream

    • 1 cup heavy cream
    • 2 tbsp powdered sugar

    Instructions
     

    Flourless Red Wine Chocolate Cake

    • Preheat oven to 350 degrees.
    • Add the chocolate and butter to a saucepan on medium-low heat and melt, stirring occasionally to help them dissolve.
    • Add the eggs and sugar to a bowl and using an electric mixer mix until light and foamy.
    • With the mixer running pour in the melted chocolate and butter, mixing to completely incorporate and combine.
    • Mix in the remaining ingredients.
    • Pour the batter into a 9" round cake pan. Bake for 30-40 minutes until set.
    • Allow to cool completely before topping with whipped cream and roasted strawberries.
    • Top with whipped cream and red wine roasted strawberries.

    Red Wine Roasted Strawberries

    • Preheat oven to 400 degrees.
    • Toss the ingredients together to combine.
    • Spread on a baking sheet or in a baking dish.
    • Roast for 15-20 minutes until the strawberries are soft and the juices thick and bubbly, stirring once halfway through.

    Whipped Cream

    • While the cake is baking whip together the heavy cream and powdered sugar until soft peaks form.
