Maple Ginger Roasted Carrots

These easy and elegant roast carrots combine sweet and savory flavors for an aromatic glaze.

  • 1 sheet pan

Ingredients
  

  • 1 lb carrots, chopped into fairly even sizes
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 2 tbsp maple syrup
  • 2 tbsp brown sugar
  • 2 tbsp olive oil
  • 1 tbsp soy sauce
  • salt and black pepper to taste
  • 1 tbsp fresh parsley, chopped

Instructions
 

  • Preheat the oven to 400 degrees.
  • Chop your carrots into fairly even sizes and place on a sheet pan.
  • Mix together the maple syrup, brown sugar, soy sauce, olive oil, garlic, ginger, and black pepper.
  • Pour over the carrots and toss to evenly coat.
  • Bake for 20 minutes until the carrots are glossy with the glaze and fork tender.
  • Garnish with parsley.
