BBQ Pork Kabobs with Pineapple

These colorful pork skewers combine fresh ingredients with a couple of pantry staples with a quick cooking meal!

Equipment

  • 1 grill
  • metal or bamboo skewers

Ingredients
 
 

  • 1 lbs pork, cut into cubes pork tenderloin works well for this
  • 1 cup barbecue sauce, plus extra for basting
  • 1/4 cup soy sauce
  • 1 lime, juiced
  • 1 tsp salt
  • 1 red onion, cut into wedges
  • 1 red bell pepper, cut into chunks
  • 2 cups pineapple, cut into chunks
  • fresh cilantro for serving

Instructions
 

  • Add your cubed pork, barbecue sauce, soy sauce, lime juice, and salt to a bowl. Mix to thoroughly coat the pork.
  • Allow the pork to marinate for an hour.
  • Preheat your grill or grill pan.
  • Build your skewers, alternating pork, peppers, onions, and pineapple.
  • Grill all sides of the kabobs, turning them often so every side gets caramelized.
  • Baste with extra barbecue sauce.
  • Use a meat thermometer to check the internal temperature of the pork. When it reaches 150, pull it off and allow the kabobs to rest for several minutes before serving.
  • Garnish with cilantro.
