1lbspork, cut into cubespork tenderloin works well for this
1cupbarbecue sauce, plus extra for basting
1/4cupsoy sauce
1lime, juiced
1tspsalt
1red onion, cut into wedges
1red bell pepper, cut into chunks
2cupspineapple, cut into chunks
fresh cilantro for serving
Instructions
Add your cubed pork, barbecue sauce, soy sauce, lime juice, and salt to a bowl. Mix to thoroughly coat the pork.
Allow the pork to marinate for an hour.
Preheat your grill or grill pan.
Build your skewers, alternating pork, peppers, onions, and pineapple.
Grill all sides of the kabobs, turning them often so every side gets caramelized.
Baste with extra barbecue sauce.
Use a meat thermometer to check the internal temperature of the pork. When it reaches 150, pull it off and allow the kabobs to rest for several minutes before serving.
