Strawberry Chia Jam

fresh strawberries, halved

fresh lemon juice
▢
zest of a lemon

honey

chia seeds
Instructions
▢
Slice the stems off of your berries and cut the smaller berries in half, the larger berries into quarters.
▢
Add the berries to a saucepan over medium heat.
▢
Add the lemon juice, honey, and lemon zest. Stir to combine.
▢
Allow the strawberries to come to a simmer, stirring occasionally. Let them cook until they begin to break down and the jam starts to thicken.
▢
Stir in the chia seeds. Continue to simmer until the jam is thick.
▢
Let cool.
▢
Transfer the strawberry chia jam to a jar or airtight container. Keep refrigerated until ready to serve.
