Greek Chicken Orzo Salad

Equipment

  • 1 serving bowl

  • 1 stockpot
  • 1 colander
  • 1 small bowl/whisk

Ingredients
  

Roast Chicken

  • 1 pack boneless skinless chicken breast
  • olive oil
  • salt
  • black pepper
  • paprika
  • dried oregano

Greek Orzo Salad

  • 2 cups cooked orzo pasta, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, diced
  • 1 cup kalamata olives
  • 1 cup feta cheese, crumbled
  • fresh mint, chopped
  • fresh dill, chopped

Greek Vinaigrette

  • 1/2 cup olive oil
  • juice from 1 lemon
  • salt and black pepper

Instructions
 

Chicken

  • Remove chicken from the casing.
  • Preheat the oven to 450° F.
  • Rub olive oil and spices onto chicken-
  • Bake in preheated oven for 20 minutes or until temperature reaches 160° F
  • Let it cool for 5 minutes before cutting

Orzo salad

  • In a bowl combine all ingredients for the salad
  • Add dressing and mix well-
  • Add your chicken and serve (option-you can cut the chicken and mix with the salad before adding the dressing into the salad.

Greek Vinaigrette

  • Add all of the ingredients to a bowl and whisk together.
