Tacos de Alambre

This meaty skillet combines bacon, beef, and chorizo with a trio of peppers and onions and melted cheese.

Equipment

  • 1 skillet or sauté pan with lid
  • 1 spoon

Ingredients
  

  • 6 strips bacon
  • 3 chorizo sausage links
  • 1 lbs beef shaved steak
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 sweet onion, sliced
  • 1 jalapeno, chopped, remove seeds for less heat if desired
  • 1 cup mozzarella cheese, shredded can use other melting cheese
  • tortillas for serving
  • lime and fresh cilantro for serving, or other favorite toppings

Spice Mix

  • 1 1/2 tsp salt
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp oregano
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • You can also use your favorite taco, fajita, or carne asada seasoning

Instructions
 

  • Mix together your spice mix and set aside.
  • Add the bacon to a skillet over medium heat. Allow the bacon to cook until the fat has rendered and the bacon is crispy. Remove from the pan and allow to drain on a paper towel lined plate.
  • Add the chorizo into the pan. Use your spoon to break it up as it cooks. Let it cook until it's cooked through, 5-7 minutes.
  • Add the peppers and onions into the pan and continue to cook. Allow them to cook until the onions are translucent, and they are halfway cooked through, about 10-15 minutes.
  • Add the spice mix and stir to combine.
  • Add the beef and let it cook until cooked through, about five minutes.
  • Add the bacon back into the pan along with the cheese. Cover the skillet and let the mixture cook until the cheese is melted.
  • Serve with tortillas, li, or your favorite toppings.
