Key Lime Pie Tiramisu

  • 1 8x8 baking dish

Ingredients
  

  • 8 oz mascarpone cheese
  • 1 can sweetened condensed milk
  • 2 1/2 cups heavy cream
  • 1 tbsp lime zest
  • 28-30 lady finger cookies
  • 1 1/2 cups freshly squeezed lime juice or store-bought key lime juice, divided
  • 2 tbsp sugar
  • lime zest and crushed lady fingers for topping

Instructions
 

  • This dessert fit an 8x8 baking dish.
  • Add the mascarpone cheese, sweetened condensed milk, and half a cup of lime juice to a bowl and mix until smooth and combined.
  • Slowly add in the heavy cream while mixing and mix until stiff peaks form. The cream mixture will hold its shape.
  • Gently fold in the lime zest.
  • In a separate bowl or shallow dish add the remaining cup of lime juice and sugar and whisk until the sugar is dissolved.
  • Quickly dip a lady finger into the lime mixture and place it into the baking dish. Repeat until the bottom is covered.
  • Spread half of the cream mixture over the top of the lady fingers.
  • Repeat with the remaining lady fingers and place on top of the cream mixture.
  • Spread the remaining cream mixture over the top.
  • Allow the tiramisu to refrigerate for at least 4-6 hours.
  • Garnish with lime zest and crushed lady fingers.
