grape or cherry tomatoes

red onion sliced
▢

zucchini, sliced
medium

yellow bell pepper, sliced
▢

kalamata olives
▢

cup
feta cheese, cubed
Greek Vinaigrette
▢
1/2
cup
olive oil
▢
1
lemon, juiced
▢

tsp
oregano
▢

garlic cloves, grated
▢

salt
▢

black pepper
Instructions
Sausage Sheet Pan Dinner
▢
Preheat oven to 400 degrees.
▢
Spread the vegetables evenly onto the sheet pan.
▢
Add all of the ingredients for the Greek vinaigrette to a jar and shake to combine.
▢
Pour half of the dressing over the vegetables. Toss to completely cover.
▢
Top the vegetables with the sausages, olives, and feta.
▢
Pour the remaining dressing over the top.
▢
Bake for 30 minutes or until the sausages are golden and the vegetables are tender.
▢
Top with parsley and enjoy!
