Summer Cherry Salad

A fresh summer salad made with cherries and goast cheese

  • 1 cup fresh cherries (pitted)
  • 1 cup  roasted red beets
  • 1 cup sliced cucumbers
  • 2-3 scallions (chopped)
  • Fresh herbs (dill and mint)
  • ½ cup goat cheese or feta (crumbled)


  • ¼ cup olive oil
  • ¼ cup red wine vinegar
  • Salt
  • Freshly ground pepper


For Dressing

  • Combine all ingredients in a bowl and whisk together.
  • If the dressing will not be used immediately, place it in a closed jar.

For the Salad

  • Add all ingredients in a large bowl.
  • Shake the dressing in a jar/give the mixture a quick whisk to ensure the oil and vinegar are combined.
  • Add half of the dressing and toss to combine well.
  • Add crumbled goat cheese and more dressing, if necessary.
    Serve and enjoy!
