Slow-cooked bacon, caramelized onion, brown sugar, coffee, and bourbon come together in one pan to create the ultimate sweet and savory condiment you'll want on everything.
Heat a saucepan over medium heat. Add the chopped bacon.
Cook, stirring occasionally, until the fat is rendered and the bacon is slightly crispy.
Using a slotted spoon, remove the cooked bacon and drain on a paper towel-lined plate. Pour off most of the excess fat from the pan.
Add the onions to the pan and turn the heat to low. Stir occasionally until caramelized, 30–40minutes.
Add the bacon back into the pan along with the brown sugar, coffee,bourbon, and red pepper flakes. Bring to a gentle boil, then reduce to a low simmer. Cook for about 1 hour, stirring occasionally, until the liquid has thickened and reduced.
Transfer to a jaror airtight container. Cool to room temperature before sealing and refrigerating.
