Citrus Fruit Salad

Winter citrus is combined with sweet strawberries and champagne in a colorful salad perfect for brunch.

  • 1 Cutting Board
  • 2 Bowls
  • 1 mixer

Ingredients
  

Citrus Fruit Salad

  • 2 grapefruits, segmented
  • 2 Cara Cara oranges, segmented
  • 1 cup strawberries, sliced
  • 2 tbsp honey
  • 1 tbsp lemon zest
  • 1/2 cup champagne, prosecco, cava, sparkling wine, or white wine
  • fresh mint, to taste

Meringue

  • 1 egg white
  • 1 tsp sugar

Instructions
 

  • Slice off either end of your citrus. Use a sharp knife to cut a peel off, starting at the top and cutting down to remove the pith and peel. Repeat with the rest of the peel.
  • Hold your citrus over a bowl. Place your knife close to the membrane of the section and cut to the middle. Repeat with the other side, removing the section of citrus. Repeat with the rest of the fruit and citrus.
  • Slice your strawberries.
  • Add the citrus, strawberries, mint, honey, and champagne to a bowl. Gently toss to combine.
  • Allow the salad to macerate for at least a couple of hours.
  • To serve, divide the citrus between serving glasses. Top with meringue if desired.

Meringue

  • Add the egg white and sugar to a bowl. Mix on high or whisk until it forms stiff peaks and holds it shape. It will become glossy as it gets thicker.
