- 1 cup tomatoes, diced
- 1 cup cucumbers, diced
- 1/2 cup mixed bell pepper, diced
- 1 bunch spring onions, chopped
- zest of 1 lemon
- juice of 1 lemon
- 1/4 cup olive oil
- fresh herbs, mint, parsley, the more the better
- watercress or favorite greens for serving optional
- feta, crumbled, for serving optional
