Juicy marinated pork, tender veggies, briny olives, and creamy feta—this Sheet Pan Pork Souvlaki has everything you need for a weeknight dinner. It’s bold, Mediterranean-inspired, and made with simple ingredients all roasted together for easy cleanup!
In a bowl whisk all ingredients for the marinade. Pour half of the marinade into the cubed pork. Combine well massaging the meat and refrigerate for at least 30 minutes.
Spread the rest of the marinade over the baby potatoes and peppers and onions. Toss to combine.
Arrange pork and vegetable on a baking sheet pan. Bake for 20 minutes. Toss to combine with the vegetables.
Remove from the oven and add tomatoes, Feta cheese and kalamata olives. Bake for another 10 minutes until pork is cooked but still juicy and potatoes are tender.
Remove from the oven and sprinkle fresh herbs like dill or parsley.
Serve with pitta bread tzatziki sauce.
