Easy Sheet Pan Pork Souvlaki Recipe

Juicy marinated pork, tender veggies, briny olives, and creamy feta—this Sheet Pan Pork Souvlaki has everything you need for a weeknight dinner. It’s bold, Mediterranean-inspired, and made with simple ingredients all roasted together for easy cleanup!

Ingredients
  

  • 2 lb pork country style ribs boneless cubed
  • 1 lb baby potatoes halved
  • 1 red bell pepper sliced
  • 1 medium red onion sliced
  • 1 package of grape tomatoes or other variety
  • 1 cup Feta cheese cubed
  • 1 cup kalamata olives
  • 1 tbsp fresh dill chopped chopped, to serve

For the marinade

  • ¼ cup olive oil
  • 3 tbsp lemon juice 1 lemon
  • 1 tbsp Dijon mustard
  • 3-4 garlic cloves grated
  • 1 tbsp salt
  • ½ tsp black pepper
  • 1 tbsp dry oregano
  • 1 tsp paprika

Instructions
 

  • Preheat oven to 425F degrees.
  • In a bowl whisk all ingredients for the marinade. Pour half of the marinade into the cubed pork. Combine well massaging the meat and refrigerate for at least 30 minutes.
  • Spread the rest of the marinade over the baby potatoes and peppers and onions. Toss to combine.
  • Arrange pork and vegetable on a baking sheet pan. Bake for 20 minutes. Toss to combine with the vegetables.
  • Remove from the oven and add tomatoes, Feta cheese and kalamata olives. Bake for another 10 minutes until pork is cooked but still juicy and potatoes are tender.
  • Remove from the oven and sprinkle fresh herbs like dill or parsley.
  • Serve with pitta bread tzatziki sauce.

Notes

Store any leftovers in an airtight container in the fridge for up to 4 days. Reheat in a skillet or in the oven until warmed through.
