Invisible Apple Cake

Invisible Apple Cake is filled with layers upon layers of lightly sweetened apples baked in a light and airy batter.

Equipment

  • mixing bowl
  • 9" loaf pan

Ingredients
 
 

  • 3-4 big apples sliced thinly
  • 3 eggs
  • 1/2 cup sugar
  • 3/4 cup flour
  • 1/2 cup milk
  • 2 tbsp butter, melted
  • almond flakes/shaved almonds
  • powdered sugar

Instructions
 

  • Preheat oven to 350 degrees.
  • Prepare your loaf pan with parchment paper and set aside. You can grease the pan if you prefer.
  • Peel your apples and slice them as thin as possible. You can use a mandoline if desired.
  • In a bowl whisk together the eggs and sugar until slightly airy. Slowly whisk in the milk, flour, and butter. The batter should be thin like a crepe batter.
  • Fold in your apples and make sure they are all separated and thoroughly coated in the batter.
  • Pour the apple batter into the prepared loaf pan.
  • Bake for 40-45 minutes.
  • Add your almond flakes the last 10 minutes of baking so they can toast.
  • Remove from the oven and allow to cool for a couple of hours.
  • Sprinkle the top with powdered sugar.
  • Enjoy!
