This Italian Sausage and Red Pepper Pasta is the kind of weeknight dinner that feels fancy but takes minimal effort! Cook pasta according to the package directions for al dente. Drain and reserve one cup of the starchy cooking water.
Heat a large skillet over medium heat with olive oil. Add the sausage to your heated skillet, breaking it up with your spoon. Cook 5 minutes or until browned and cooked through. Remove the sausage from the skillet.
Add onion and garlic to the skillet and sauté until translucent for about 5 minutes. Add the tomato paste and continue to stir. Add the red peppers and cook for another 3-4 minutes.
