Rapini Orange Salad with Tahini Dressing

Blanched rapini, sweet Cara Cara oranges, crunchy nuts, and a bright and nutty lemon-tahini dressing make this salad a star.

  • 1 Large Pot
  • 1 bowl
  • 1 serving bowl/platter
  • 1 mason jar

Ingredients
  

  • 1 lbs rapini, ends trimmed
  • 1-2 Cara Cara oranges, sliced
  • 1/4 cup shaved almonds
  • 1/4 cup olive oil
  • 2 tbsp tahini
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/2 lemon, juiced
  • 1 garlic clove, grated

Instructions
 

  • Bring a large pot of water to a boil. Add salt.
  • Add the rapini to the boiling water. Allow it to boil for 5 minutes.
  • Remove the rapini from the boiling water and transfer it to a bowl of ice water. Let it sit for 5 minutes.
  • Add the olive oil, lemon juice, tahini, salt, pepper, and garlic to a mason jar. Screw on the lid and shake it vigorously.
  • Spread the rapini on a serving platter.
  • Top with the orange slices and almonds.
  • Drizzle the dressing over the top.
