Rhubarb Ginger Gin and Tonic

Tart and spiced rhubarb simple syrup combined with colorful pea blossom infused gin make this gin and tonic a drink to celebrate.

  • 1 small saucepan
  • 1 food processor
  • 1 fine mesh strainer
  • 2 cocktail glasses

Ingredients
  

Rhubarb Ginger Simple Syrup

  • 2 cups rhubarb, sliced
  • 1/2 cup sugar
  • 1/2 cup water
  • 1 tsp fresh ginger, grated
  • strawberry, optional

Rhubarb Ginger Gin and Tonic

  • 2 oz Empress1908 Gin
  • 1 tbsp rhubarb ginger simple syrup
  • 1 oz lemon juice
  • tonic water to serve
  • crushed ice

Instructions
 

Rhubarb Ginger Simple Syrup

  • Place the rhubarb, ginger, water, and sugar into a small saucepan over medium heat. Allow it to simmer until the sugar has completely dissolved and the rhubarb has softened and begun to break down.
  • Add the rhubarb simple syrup to a food processor or blender along with a strawberry if adding. Blend until smooth.
  • Pour the mixture into a fine mesh strainer over a bowl or glass. Use a spatula to force it through, removing any of the larger more fibrous pieces.
  • Keep stored in an airtight container in the refrigerator until ready to use.

Rhubarb Ginger Gin and Tonic

  • Pour the rhubarb simple syrup into the bottom of your cocktail glass.
  • Add your lemon juice and top with ice.
  • Add the tonic water.
  • Top off your cocktail with the gin. Cheers!
