Ingredients
  

  • 24 oz baby potatoes
  • 2 tbsp duck fat or olive oil
  • 1/2 tsp Italian seasoning
  • 1/4 tsp paprika
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • 1/3 cup Buffalo sauce
  • 1/4 cup feta cheese crumbled
  • 1 tbsp scallions chopped

Instructions
 

  • Preheat oven to 400F.
  • Add the duck fat into a cast iron pan and preheat it in the oven.
  • Wash and dry the potatoes. Transfer potatoes into the cast iron pan. Season and toss to combine. Roast in the oven for 20-25 minutes until the fork goes thru easily.
  • Remove pan from the oven and drizzle potatoes with Buffalo sauce and sprinkle feta cheese and scallions.
  • Enjoy!
