These Easy Apricot and Goat Cheese Galettes are a delightful blend of sweet and savory flavors, wrapped in flaky puff pastry. Whether enjoyed as a decadent dessert or a delightful brunch treat, each bite transports you to a sun-drenched orchard, where the aroma of ripe fruit fills the air.

Ingredients
  

  • 1 sheet puff pastry thawed in the refrigerator
  • 5-6 apricots sliced
  • 1 6-8 oz herb goat cheese log
  • 2 tbsp honey divided
  • fresh thyme to sprinkle
  • 1 tbsp crushed pistachios
  • 1 egg for egg wash

Instructions
 

  • Preheat oven to 400F degrees.
  • Unfold the puff pastry and cut in fours squares.
  • In a bowl mix the soft goat cheese with one tbsp of honey.
  • Spread goat cheese mixture equally in each square leaving 1/2” around.
  • Top with sliced apricots.
  • Fold the sides around the apricots to create mini galettes.
  • Brush the dough with egg wash. Drizzle honey over the galettes.
  • Sprinkle fresh thyme and pistachios and bake for 25-30 minutes or until golden brown.
  • Let it cool for 10-15 minutes before serving.
