Ingredients

  • 2 medium onions thinly sliced
  • 1 cup flour
  • ½ cup corn flour
  • ½ tsp baking powder
  • 1 tsp salt
  • 1 tbsp cajun spice mix
  • 1 tsp paprika
  • ½ tsp cayenne pepper
  • 2-3 tbsp water
  • Oil for frying

Sauce

  • 1 cup mayo
  • ½ cup ketchup
  • 1 tsp cajun mix
  • 2 tbsp lemon juice
  • 1 tsp sriracha

Instructions

  • In a large mixing bowl, whisk together the flour, corn flour, baking powder, salt, Cajun mix, paprika, and cayenne pepper.
  • Add the sliced onions to the dry mixture, tossing to coat evenly. Gradually add water, 1 tablespoon at a time, until a thick batter forms around the onions.
  • In a deep pan or skillet, heat the oil.
  • Drop spoonfuls of the onion mixture into the hot oil, making sure not to overcrowd the pan. Fry for about 3-4 minutes per side or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
  • In a small bowl, mix together the mayo, ketchup, Cajun mix, lemon juice, and sriracha until well combined.
  • Enjoy the fritters hot with the spicy dipping sauce.

Notes

If you don't eat them all, you can store them for later in an airtight container in the refrigerator for up to 2 days. To reheat, you can heat them up in the air fryer, toaster oven or oven to ensure they get crispy again!
