Sugar Snap Pea Salad with Feta Cheese and Mint Dressing

Ingredients
  

  • 8 oz sugar snap peas sliced thinly
  • 1 cup radishes cut in matchsticks
  • ½ cup red onion diced
  • 1 cup cucumber sliced
  • 1 cup corn canned or fresh
  • 1 cup crumbled feta cheese
  • ¼ cup fresh mint chopped

Dressing

  • 1 handful of fresh mint
  • 1 tbsp Dijon mustard
  • 1 tbsp honey or agave syrup
  • 1/4 cup olive oil
  • 3 tbsp lemon juice
  • Salt and black pepper to taste

Instructions
 

  • In a blender add all ingredients for the dressing. Blend until creamy.
  • In a large bowl add all the vegetables, feta cheese and fresh mint.
  • Drizzle the dressing over the salad. Toss to combine. Enjoy!

Notes

  • Make the dressing up to 2 days ahead and store it refrigerated in a sealed container. The flavor will just get better!
  • Keep vegetables crisp by preparing the salad no more than 2 hours before serving. If making further ahead, store the dressing separately and combine just before serving.
