Add Brussels Sprouts and pancetta into a baking sheet pan. Season with salt and black pepper and drizzle with olive oil. Toss to combine and bake in the oven for 20 minutes.
Remove from the oven and let them cool for 5 minutes.
In a bowl combine the cream cheese, sour cream, Swiss cheese and cayenne pepper a garlic powder.
Add the Brussels sprouts mixture into the bowl and combine well the creamy mixture. Pour it on a baking dish or cast iron pan. Cover it with mozzarella cheese and bake for 20 minutes until the melts.
