Deviled Eggs with Lifeway Farmer Cheese

These luxurious Deviled Eggs feature a silky-smooth filling made with tangy Lifeway Farmer Cheese and topped with delicate smoked salmon! While traditional deviled eggs rely on mayonnaise, this version uses farmer cheese for a protein-packed, probiotic-rich filling that's both creamy and light.

Ingredients
  

  • 6 eggs hard boiled
  • 4 oz (1/2 cup) Lifeway Farmer Cheese
  • 1 tbsp fresh chopped dill
  • 1 tbsp fresh chopped chives
  • 1 tsp lemon zest
  • 2 tbsp lemon juice
  • 3 tbsp olive oil
  • salt and black pepper to taste
  • 2 oz smoked salmon
  • chopped fresh dill to serve

Instructions
 

  • Start by boiling the eggs for 10 minutes. Transfer them to a bowl with ice water. Peel the eggs and cut both extremities, then cut them in half. Remove the hard-boiled yolk and save it in a bowl.
  • In a food processor add the farmer cheese, yolks, herbs, lemon zest, lemon juice, salt, and black pepper. Blend until smooth. Slowly drizzle the olive oil into the food processor and continue to blend for smooth texture.
  • Place a small piece of smoked salmon into the egg whites. Spoon or pipe the filling into the egg white. Sprinkle with fresh dill and serve.
