Easy Beef Stroganoff

This easy beef stroganoff is made with a quick sear of sirloin beef and the most delicious creamy mushroom sauce. The perfect dish for a busy weeknight, yet fancy enough to enjoy with friends and family. Enjoy!

Ingredients
  

  • 1 tbsp avocado oil
  • 1 lb sirloin steak thinly sliced
  • 2 tbsp butter
  • 1 onion sliced
  • 2 cloves of garlic minced
  • 1 lb Bella mushrooms sliced
  • 2 tbsp flour
  • 1 cup beef broth
  • 1 cup heavy cream
  • 1 tbsp Dijon mustard
  • 1 tbsp sour cream
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • ¼ black pepper
  • 1 tbsp chives chopped for garnish

Instructions
 

  • Heat the oil in a large skillet over high heat.
  • Add steak to the skillet and quickly spread with a tong.
  • Cook the steak until brown, about 2 minutes on each side.
  • Remove steak from the heat and set aside.
  • Turn heat to medium high and add butter in the same skillet.
  • Add onion and cook for 3 minutes until translucent.
  • Add mushrooms and garlic and continue to sauté for another 5- 7 minutes.
  • Sprinkle with flour and deglaze the skillet with beef broth.
  • Add heavy cream, mustard, sour cream and Worcestershire sauce.
  • Season with salt and black pepper.
  • Let the sauce simmer until it thickens.
  • Bring back the steak and let it simmer for another minute.
  • Serve over mashed potatoes, rice or pasta, and sprinkle with fresh chives. Enjoy!
