Ingredients
  

  • 2 peaches sliced
  • 1 cup cooked beets sliced
  • 1 cup cherry tomatoes sliced
  • ¼ red onion sliced
  • ¼ cup feta cheese crumbles

Dressing:

  • 3 tbsp lemon juice
  • 6 tbsp olive oil
  • 2 tbsp fresh dill chopped
  • salt and black pepper to taste

Instructions
 

  • In a large bowl, whisk together the lemon juice, olive oil, chopped dill, salt, and black pepper until well combined.
  • Into the same bowl, gently toss the sliced peaches, beets, cherry tomatoes, and red onion together and toss to coat all the ingredients evenly.
  • Sprinkle the feta cheese crumbles over the top of the salad.
  • Serve immediately or chill for a few minutes before serving to let the flavors meld.
