Grilled Meatballs Skewers

Grilled Meatballs with vegetables

Ingredients
  

  • 1 package Italian Style Meatballs @cravehouseplantbasedfoods
  • 1 each bell pepper, green, red, and orange cut into chunks
  • 1 Red onion cut into wedges
  • 2 tbsp extra-virgin olive oil divided
  • 1 tbsp fresh parsley
  • salt for the vegetables

Whipped feta sauce

  • 1 cup feta cheese
  • 1 tbsp Greek yogurt
  • 1 tbsp extra-virgin olive oil
  • 1 tbsp lemon juice
  • 1-2 cloves of garlic

Instructions
 

  • Thaw the meatball as per package instructions.
  • Prepare and cut all the vegetable. Place them in a large bowl, drizzle one tablespoon olive oil and season with salt. Toss to combine.
  • In a food processor blend all ingredients for the whipped feta cheese sauce. It can be made one day ahead. Keep it refrigerated!
  • Preheat an outdoor grill to medium-high heat
  • Once the meatballs are thawed rub them with the rest of the olive oil
  • Skewer the meatballs and veggies, alternating for color and even cooking. If using bamboo skewer sticks, soak them in water for at least 1 hour before grilling to prevent burning.
  • Place the skewers on the grill and cook for about 5-8 minutes until the temperature inside the meatball reaches at 165F.
  • Remove them from heat and let it rest for a few minutes before serving.
  • Serve the skewers over whipped feta sauce.
