Whipped feta sauce
1cupfeta cheese
1 tbspGreek yogurt
1tbspextra-virgin olive oil
1tbsplemon juice
1-2cloves of garlic
Instructions
Thaw the meatball as per package instructions.
Prepare and cut all the vegetable. Place them in a large bowl, drizzle one tablespoon olive oil and season with salt. Toss to combine.
In a food processor blend all ingredients for the whipped feta cheese sauce. It can be made one day ahead. Keep it refrigerated!
Preheat an outdoor grill to medium-high heat
Once the meatballs are thawed rub them with the rest of the olive oil
Skewer the meatballs and veggies, alternating for color and even cooking. If using bamboo skewer sticks, soak them in water for at least 1 hour before grilling to prevent burning.
Place the skewers on the grill and cook for about 5-8 minutes until the temperature inside the meatball reaches at 165F.
Remove them from heat and let it rest for a few minutes before serving.
