It’s no secret how much I love salads. Whether they’re a supporting side to the main course such as my Marinated Mushroom Salad or the main dish like my Salmon Niçoise Salad I am always looking for fun and new ways to create beautiful and fresh dishes.

Dinner Made Easy

I love taking the help of the grocery store when it comes to serving up both weeknight meals, and also easy lunches. Using one of my favorite freezer staples, this salad comes together effortlessly.

They’re made with high quality, sustainably caught wild Alaskan pollack. They also have no artificial ingredients, fillers, preservatives, and are a great source of protein.
  • Chopped romaine – this brings all the crunch and makes a great canvas.
  • Hardboiled eggs
  • Chopped bacon, because bacon really does make everything better. Plus, you can’t have a Cobb salad without the bacon
  • Halved cherry or grape tomatoes
  • Sliced red onion for a bright pop
  • Avocado for that creamy bite
  • Corn kernels

In addition to the ingredients for the salad itself, this salad is topped off with a tangy and delicious blue cheese dressing. Making your own blue cheese doesn’t have to be difficult and you already probably have most of the ingredients.

  • Crumbled blue cheese
  • Kefir, this offers up great tang and creaminess
  • Fresh lemon juice
  • Fresh dill
  • Salt and pepper to taste

How to Make The Ultimate Crispy Fish Fillet Cobb Salad

With just a few simple steps, you will be on your way to create your family’s new favorite salad. This is the perfect light and fresh dish for the summer.

Time needed: 20 minutes

This colorful and vibrant salad comes together in less than half an hour!

  1. Fish First

    Preheat your oven to 450 degrees. Bake the fish according to the package directions. The total bake time should be between 17-19 minutes. Flip the fish at the 12-minute mark so both sides can get crispy and golden.

    The fish can also be prepared in an air fryer, cutting down on the time. It only takes 9-11 minutes in the air fryer at 400 degrees.

  2. Chop Chop!

    Chop up your vegetables. You want everything in fairly uniform bites. Halve the tomatoes and quarter your hard boiled eggs.

  3. Dress it Up

    Making the salad dressing couldn’t be easier. Just add all of the ingredients to a blender and blend until silky, creamy, and smooth.

  4. All About the Layers

    This is a composed salad. To build your salad lay down the base of romaine. Create a section for each ingredient. This will allow people to take as much or as little of any one ingredient as they want.

    Drizzle on the salad dressing over the top. You can toss to combine or leave it as a composed salad.

Easy Swaps

While all of the ingredients are pretty easily accessible and straight forward, here are a few suggestions and ideas to switch things up.

  • Lettuce – romaine is a sturdy lettuce that holds up to the weighty ingredients. However you can swap the romaine for iceberg or green leaf lettuce.
  • Tomatoes – Use what looks good. Either cherry or grape tomatoes will work for this, but if it’s tomato season feel free to use heirloom, vine-ripe, or beefeater tomatoes. Just chop them into bite sized pieces.
  • Blue cheese – Use your favorite blue cheese for the dressing. Gorgonzola and buttermilk blue cheese will offer up a more mild flavor while Roquefort or a Danish blue will be more bold.
  • Corn – This salad is a great use of leftover grilled corn. You can use grilled corn or steamed corn for this salad. In addition if corn isn’t in season you can also use canned corn or frozen corn that has been defrosted.

Besides your chopping board and a sharp knife, you only need a few tools to create this gorgeous salad.

  • Baking sheet – This recipe calls for six crispy fish fillets so you will need a baking sheet large enough to spread them out slightly.
  • Air fryer – Skip the oven and make these in the air fryer. The only change you will have to make is cooking them in batches as they recommend cooking four fish fillets at a time.
  • Blender – Let the blender do all of the work of making this salad. You can also use a small food processor for this.

How to Store The Ultimate Crispy Fish Fillet Cobb Salad

I have tips for how you can store this salad both before you serve it, and also for after.

This is a great salad to make as meal prep. Most of the ingredients can be chopped ahead of time, such as the lettuce, tomato, bacon, and hardboiled eggs. Simply store each component seperately.

If you plan on making this salad and saving some later for meal prep, hold off dressing it with the salad dressing and allow everyone to add their own. This will keep the ingredients crisper longer in the refrigerator.

Crispy Fish Fillet Cobb Salad

  • 6 Gorton's Crispy Battered Fish Fillets
  • 2 cups romaine, chopped
  • 3-4 hard boiled eggs, quartered
  • 1 cup cooked bacon, chopped
  • 2 cups cherry tomatoes, halved
  • 1 avocado, cubed
  • 1 cup corn, steamed or grilled

Blue Cheese Dressing

  • 1 cup blue cheese, crumbled
  • 1 cup kefir
  • 1/2 lemon, juiced
  • 1 tbsp fresh dill, chopped
  • salt and pepper to taste

Instructions

  • Preheat oven to 450 degrees.
  • Add the fish fillets to a baking sheet. Bake them for a total of 17-19 minutes, flipping them at the 12-minute mark.
  • Remove the fish fillets from the oven and allow them to cool for several minutes before chopping them up into smaller pieces.
  • Arrange the base of romaine lettuce on a large plate or in a large serving bowl.
  • Arrange the remaining ingredients on top of the salad. You can create this as an arranged salad with each ingredient in its own spot. This will allow people to take as much or as little of any ingredient as they like.
  • Drizzle the blue cheese dressing over the top. You can serve like this or toss to combine.
  • Serve with extra dressing on the side if desired.
