When you start with the best ingredients it doesn’t take much to make an amazing meal. One of my favorite things to keep on hand is al fresco sausages. Their fully cooked chicken sausages are full of protein while being free of artificial ingredients and minimally processed. Not only does my family love them, but they’re something I always feel good about serving them.

For this recipe I am using al fresco Smoked Andouille Chicken Sausage. Because these sausages are fully cooked, I can spend more time with my family and less time cooking. There’s also the added bonus of having less dishes as well!

The kiss of smoke from smoked Spanish paprika is complemented by the sweet bite of sundried tomatoes in this recipe. Drizzle a little of the oil from the sundried tomatoes or a splash of olive oil over the ingredients for extra richness.


The gnocchi becomes both soft and tender while roasting in the drippings along with the sausage. Fresh baby spinach is wilted in at the end along with the nutty, savory pop of parmesan. Every bite is filled with texture and flavor, with the crispy sheet pan gnocchi adding golden, slightly crunchy perfection throughout.

How to Make Sausage and Gnocchi Sheet Pan Dinner

  • Preheat your oven to 400 degrees. Part of what allows this to cook so quick it that everything roasts at a high temperature.
  • Toss your gnocchi and sundried tomatoes packed in oil in a large bowl. The oil from the tomatoes will add another layer of flavor.
  • Add your sliced Smoked Andouille Chicken Sausage into a prepared baking sheet pan along with the gnocchi and sundried tomatoes.
  • Season the mixture with salt and pepper.Add a pinch of red pepper flakes (optional)
  • Bake for 15-20 minutes until the gnocchi becomes fluffy and the sausage gets a little caramelized.
  • Remove from the oven and add your spinach. The residual heat will wilt it.
  • Top with grated parmesan. Simple, fresh, easy, and delicious!

Substitutions & Variations

While the original recipe calls for pillowy gnocchi, sweet potato gnocchi or small diced potatoes or sweet potatoes make a fantastic substitute. They roast right alongside the sausage and veggies, soaking up all the smoky, savory flavors while getting perfectly tender on the inside and slightly crispy on the edges. Or, if you want a lower carb option, cauliflower gnocchi is a great option. Instead of spinach kale works really well in this recipe.

To elevate the dish even further, sprinkle fresh herbs like thyme or rosemary over the pan before roasting or your favorite spices. A touch of toasted nuts or a splash of balsamic glaze at the end can make this simple weeknight meal feel gourmet all in just one pan, with leftovers that taste even better the next day.

Storage Suggestions

Store leftovers in an airtight container in the fridge for up to 3–4 days. Reheat in the oven for 10–15 minutes to restore crispness, or microwave individual portions for a quick meal. You can also freeze it for up to 2 months, though the gnocchi may be slightly softer after thawing.

Ingredients
 
 

  • 11 oz al fresco Smoked Andouille Chicken Sausage, sliced
  • 12 oz fresh gnocchi
  • 1/2 cup sundried tomatoes in oil
  • 2 cups baby spinach
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup parmesan cheese
  • pinch red pepper flakes optional

Instructions
 

  • Preheat the oven to 400 degrees.
  • Add the gnocchi and sundried tomatoes to a large bowl. Toss to fully coat the gnocchi in the oil and combine.
  • Spread the sliced sausage onto the baking sheet lined with parchment paper. Add the gnocchi and sundried tomatoes.
  • Season with salt and pepper.Add a pinch of red pepper flakes (optional)
  • Bake for 15-20 minutes until the gnocchi are fluffy.
  • Remove from the oven and add the spinach. Using a spatula toss to combine. The residual heat should wilt the spinach.
  • Top with the parmesan cheese.
  • Serve immediately and enjoy!

    I made this last night. I omitted the tomatoes & spinach. Add sliced sweet onion, EVOO & 1 T Italian Seasoning blend. My husband & son said it’s a keeper
