Watermelon Salsa

Nothing quite says Summer like an awesome salsa. Watermelon is extremely refreshing and perfect to have in the Summer months, especially if you live in the Tropics!
Watermelon salsa?! know when you hear salsa you think tomatoes, jalapeno, onion, all these beautiful flavours married together. But, what screams summer better than watermelon fruit? It is present all summer long in our parties and backyard gatherings. We enjoy watermelon slices, popsicles, lemonade, and slushies. Why not include watermelon in savoury recipes such as salsa?

It is great with chips, tacos, or grilled meat. I am thinking that it will be fantastic with a grilled chicken kebab! I took a spin with Mediterranean flavours, by using mint and feta cheese. You will end up with a very refreshing salsa that you want to make and enjoy all summer. Plus, if you are going to use this as a dip or appetizer, the chilli lime pita chips from @toufayan are perfect with this juicy, fresh and beautiful looking salsa!

These are perfect for kids parties or even to be served with tacos for Taco Tuesday. It is certainly a great way to incorporate fruits into your kid’s diet, especially if they don’t particularly like them.

What is Watermelon Salsa?

Watermelon Salsa as the name suggests is a salsa with watermelon as the main ingredient. It is equally savoury and refreshing. Salsa is typically a sauce that includes tomatoes, onions and peppers as the basic ingredients. This is a popular Mexican dish that may be paired with tacos or other items and it has several variations. Fruit salsas are also quite common as there is even mango salsa and you may opt to add beans or corn to your salsa, depending on the main ingredients being used. 

Watermelon Salsa Ingredients

Watermelon- when selecting a watermelon for your recipe, you may opt to choose either a golden or red-fleshed melon. It is important that you select a watermelon that is ripe; however, at the same time, you do not want to select one that is overripe. And, worst of all, the last thing you would like to have is a tasteless watermelon. Some things to pay attention to when deciding on watermelon are the shape (round ones tend to be sweeter), spots (if there are many spots, it should be sweet) and the colour of the stripes (a watermelon that has dark green stripes is one sign of a riper one). 

Consuming watermelons are beneficial to health in many ways, including helping to reduce the risk of cancer. In addition, it is a great way to help you stay hydrated. Hydration is definitely needed for these Summer months!

Cucumbers- Like watermelons, cucumbers also aid in keeping you hydrated. They are said to contribute to weight loss as they contain a lot of water and are low in calories. Also, if you are looking to increase your consumption of Vitamin K, eating cucumbers is a good place to start.

Feta Cheese- Feta Cheese is a Greek cheese that is made from the milk of sheep or goats. It is soft and white in colour and may be purchased at your local supermarket or made from scratch.

How to Store Watermelon Salsa?

While most salsas may last in the refrigerator for up to 5 days, this is not the case with watermelon salsa. This is so because watermelons go bad easily and so care must be taken to preserve their freshness. To do this, place the salsa in an airtight container and place it in the refrigerator; check it each day for any liquid that may gather in the container and remove the liquid.

There is also the option of freezing the salsa in an airtight container but the texture of it will change. The watermelon will become somewhat soggy when thawed so this is not necessarily a good idea.

It is recommended however that you prepare just enough to use in one sitting, to avoid having to store it. 

What can you eat Watermelon Salsa with?

Fruit salsas are quite commonly paired with meat dishes such as fish and chicken. Watermelon Salsa is no different and so can be paired with any of these or served with tacos, corn or tortilla chips.

Watermelon Salsa Variations

Watermelon Salsa can be prepared using various ingredients. You may opt to add onions, bell peppers, scallions and jalapenos.

To add a twist to your watermelon salsa, you may want to add some mangos to it. Mangos will add to the sweetness and provide additional flavour to the dish. There are endless possibilities with this dish!

Tips

  • Use lemon instead of lime. It is still very refreshing and delicious.
  • Feel free to add more summer vegetables, such as corn!
  • To make this recipe vegan, omit the feta cheese. You may replace it with a plant based alternative or just have it as is.

Watermelon Salsa Recipe

Ingredients
 
 

  • 2 cup diced watermelon
  • 2 cup diced cucumbers
  • 1/2 cup crumbled feta cheese
  • 1/4 cup lime juice
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions
 

  • Dice enough watermelon to measure two cups
  • Dice cucumbers (small)
  • Chop fresh mint or basil
  • In a bowl, combine watermelon, cucumber, fresh mint, feta cheese, salt and pepper.
  • Sprinkle with lime juice
  • Mix everything together and taste for seasoning. Add more lime juice if needed
